Cannellini Beans or white kidney beans are large white beans that cook up creamy and smooth with a sweet, nutty flavour. They are popular in soups like minestrone, in salads, especially paired with tuna, or pureed in spreads and dips. Cannellini beans are an excellent source of iron, magnesium, and folate, and are a great base for healthy vegetarian meals. Canellini beans pair well with arugula, thyme, sage, parsley, basil, kale, tomatoes, wild mushrooms, garlic, lemon, pork, poultry, Pecorino and Parmesan, olive oil, and prosciutto and pancetta. Dry Canellini beans should be soaked in water for approximately 6–8 hours before cooking.
